I love Edamame! I even grew it in my garden this summer!
Here are my favorite recipes:
1 Bag of Frozen Shelled Edamame (I use Birdseye Steamfresh and steam
it then let it cool)
2 Tablespoons of Tahini
3 Tablespoons of lemon
2 Cloves of Garlic
2 Tablespoons of Olive Oil
1/2 Tsp of Salt
Blend in food processor and serve with pita chips, tortilla chips, carrots, etc!
I have also used lime instead of lemon in this recipe and added cilantro for a Mexican flair.
Edamame Black Bean Salad
1 Bag of Frozen Shelled Edamame
1 can of black beans rinsed and drained
2 medium Roma tomatoes chopped
1 medium bell pepper
1/2 red onion
1/4 cup of fresh cilantro
1/2 cup of your favorite vinaigrette dressing
Mix together, chill and serve.
